Elizabeth Jackson was born and raised in Lapeer, Michigan. In 1993, she moved to Pennsylvania to help her mom open a new restaurant and met her husband, Sean. They moved to Houston, Texas to continue their education in 1996 and married in 1999. Sean already had his BS from Florida Institute of Technology in Aviation Management and Elizabeth her ABA from Lehigh Carbon Community College. While in Houston, Sean finished his Master of Education degree and all but his dissertation of his PhD of Instructional Technology and Elizabeth her Bachelor of Business Administration. By 1999, they had both graduated, and joined the workforce.
Elizabeth began her career as a bookkeeper for a multi-family property management company. She continued in this industry until their beautiful daughter Emma was born in October of 2002. A few years later, they welcomed Noah in February of 2005. In 2007, after completing her Master of Business Administration at Texas A&M, Elizabeth began teaching college at Lone Star College Cy-Fair. After 16 years in Houston, 4 addresses, purchase of 2 homes, 3 college degrees, 2 children, 1 dog, and a cat, they decided it was time for a safer, more family friendly environment for this family of 4. In 2012, they decided to follow their best friends, The Gibson Family, and move to Utah.
The Jacksons arrived in Heber City on May 20th, 2012. They bought a house sight-unseen and it has become the home of their dreams. Elizabeth was able to continue her dream job of teaching college as she developed her classes to be taught online while anticipating the move to Utah. She added teaching classes at UVU in 2021, including both the Heber and main campuses. While teaching at the UVU Wasatch Campus, she became familiar with the Wasatch Community Foundation and knew that she wanted to be a part of what they do.
Elizabeth is loving life in Utah and plans to live out the rest of her life in Heber City. She is known for her large annual Easter egg hunts for her neighborhood on her beautiful property, mothering her students, loving her family, and she enjoys the great outdoors– especially soaking in her pool and hot tub. She is excited about joining the WCF and helping the community.
